THIS TAKES A LOT OF POTS AND PANS, BUT IT IS DEFINETLY WORTH IT. EVERYONE RAVES ABOUT IT
Has to be Pastichio
2 lbs ground beef
2 t salt
1/4 t pepper
4 tbl butter
4 tbs parsley
1/2 cup tomato sauce
1/2 c water or wine
1 lb macaroni long tube macaroni sold in middle eastern stores use ziti if you want
1/2 c butter
4 cups grated romano cheese
bread crumbs
add salt and pepper to meat, fry until juices are absorbed...add butter and parsley
brown well
add tomato sauce and water simmer until liquid is absorbed about 15 minutes.
Cook macaroni for 10 minutes, do not overcook
Rinse and drain well
Grease large baking pan 11x14 with melted butter sprinkle with grated cheese and bread crumbs
Combine mac with 1/2 c butter arrange 1/2 of mixture in pan, making sure all the macaroni goes the same way...if you use ziti this step isnt necessary.
Sprinkle with grated cheese.
cover with meat mixture spreading evenly over entire surface.
cover with remaining macaroni and grated cheese
Crema
1/2 cup butter
8 tbls flour
4 cups milk
4-6 egg yolks
salt and pepper to taste
melt butter, add flour stir until lightly browned
add milk slowly, stirring constantly until slightly thickened.
Slowly add egg yolks and cook very low until thickened (crema should be thick enough to form a top layer without seeping through macaroni meat mixture)
Spread crema over top layer of macaroni, sprinkle with grated cheese. (I usually sprinkle a bit of allspice over top)
Makes about 15 servings, recipe can be halved easily...
Bake at 350 for about an hour
